Item 1: Components of olive oil: general analysis applications. Composition of olive oil: fatty acids, triglycerides and minor components. Unsaponifiable. Changes in the composition of olive oil because of its treatment. Identity characteristics of olive oil: International Olive Council (IOC) Trade Standard, European Union Regulation, and Codex Alimentarius Standard. Commercial categories of olive oil. Purity and quality criteria. Quality of olive oil. Factors affecting the quality of olive oil.
Item 2: Evaluation of the acidity, oxidation state and degree of unsaturation of olive oils. Acidity: concept, origin, forms of expression, method of determination, acidity as a quality criterion. Saponification value. Oxidation process: stages and products of oxidation. Determination of the oxidation state: peroxide value, K 270, K 232 and deltaK. Determination of oxidative stability. Unsaturation. Iodine number: definition, determination method, iodine number as purity criterion. Oil classification based on unsaturation.
Item 3: Analysis of the majority and minority components of olive oil. Saponification and composition of the unsaponifiable fraction. Determination of unsaponifiable matter. Fractionation of the unsaponifiable. Analysis of sterols, erythrodiol and uvaol, stigmastadiene, aliphatic alcohols, waxes and ethyl esters. Determination of 2-glyceryl monopalmitate content. Analysis of fatty acids and triglycerides.
Item 4: Sensory assessment of virgin olive oil. Specific vocabulary for virgin olive oil. General methodology
.
Theory classes: fundamentally expository method,
supported by the use of the blackboard and video cannon. The active
participation of the student in class will be promoted at all
times.
.
Laboratory practices: it will try to make the
student aware of the importance of applying good laboratory
practices and in particular of gathering all the work and
experiences carried out in the laboratory in a personal laboratory
notebook. This will greatly increase your performance and
utilization. During the development of the practices, it will be
tried to solve the particular difficulties of the students as well
as to insist on the concepts and ideas related to the practice in
question. The indications given to the students will be indicative,
preventing the practice from being an automated performance devoid
of value. The laboratory will also try to establish a more personal
relationship with the student.

Seminars: considering the heterogeneity of the
degrees from which the students come, seminars will be held to
support the theory classes. A certain topic will be presented for a
limited time and then the students will work on solving the
questions and/or exercises raised.

Resolution of questionnaires: several exercises
will be proposed to the students throughout the course, consisting
of short questions of application of the theory, which they will
have to solve outside of class. These exercises will be delivered
to students periodically through the virtual teaching platform,
they will be given time to solve them and then the corresponding
solutions will be provided.

Self-assessment exercises. For each subject of the
Program, students must carry out a self-assessment exercise,
through the virtual teaching platform, which will be evaluated and
taken into account for the final grade of the subject.
. The distribution of virtual/face-to-face teaching hours by
subject is as follows:
Topic 1: 4 h (virtual theory) + 1 h (face-to-face theory) + 2 h (virtual AADs) + 1 h (face-to-face AADs)
Topic 2: 3 h (virtual theory) + 1 h (face-to-face theory) + 3 h (virtual AADs) + 1 h (face-to-face AADs)
Topic 3: 2 h (virtual theory) + 2 h (face-to-face theory) + 2 h (virtual AADs) + 1 h (face-to-face AADs)
. Topic 4 is taught throughout the sensory analysis practices.
Students with special educational needs should contact the Student Attention Service (Servicio de Atención y Ayudas al Estudiante) in order to receive the appropriate academic support
. Exam. At the end of the course, there will be a written exam of the contents taught in the theory classes, seminars and self-assessment exercises. In this exam it will be necessary to obtain a minimum grade of 4.0 to pass the subject (50% of the final grade).

Practices. The
practices of chemical analysis and sensory
analysis are mandatory, so you can not exceed the subject
without having completed them. They cannot be recovered or
validated for any other activity. In case of absence in some of the
sessions, duly justified, it will be taken into account in the
final evaluation. Sensory analysis practices will be evaluated by
attending them. Regarding the chemical analysis practices, at the
end the students will prepare a practice notebook that will be
evaluated (25% of the final grade).
In the case of not passing the practices, a recovery can be made through a practical exam.
. Self-assessment exercises. They will be carried out on the virtual teaching platform in a period of time established for it. The students will be able to choose the moment to start them within said period, having a limited time for their completion (20% of the final grade).
Note. The evaluation instrument that appears in the table in section 7 is not correct. Where it says "2 questionnaires" it should say "self-assessment exercises" and the paragraph "Completion of a questionnaire .... of practices (5%)" should be deleted and replaced by "Evaluation of the practice notebook. Observation of interest, capacity and development of the student during the practices".

The evaluation system will be maintained for both ordinary and extraordinary calls. It will be necessary to obtain a minimum score of 4 (out of 10) in the written exam to access the weighted grade.

For interaction with the group of students the teaching platform will be used as well as the Google Suite resources . The VPN will be used to connect to the UJA licensed software. Electronic bibliographic resources w ill be used.

Purpose: In accordance with the Universities Law and other national and regional regulations in force, carrying out exams and assessment tests corresponding to the courses students are registered in. In order to avoid frauds while sitting the exam, the exam will be answered using a videoconference system, being able the academic staff of the University of Jaén to compare and contrast the image of the person who is answering the exam with the student's photographic files. Likewise, in order to provide the exam with evidential content for revisions or claims, in accordance with current regulation frameworks, the exam will be recorded and stored.
Legitimacy: compliance with legal obligations (Universities Law) and other national and regional regulations currently in force.
Addressees: service providers who are the owners of the platforms where the exams are carried out and with whom the University of Jaén has signed the corresponding data access contracts.
Storage periods: those established in current in force regulations. In the specific case of exam videoconference recordings, not before the examination records and transcripts are closed or the exam can still be reviewed or challenged.
Rights: you can exercise your right of access, amendment, cancellation, opposition, suppression, limitation and portability by sending a letter to the postal or electronic address indicated above.
