3. CONTENT DESCRIPTION

Local, State and European risk assessment regarding food and feed safety. Comprehensive programme to improve EU food safety, ensure a high level of consumer protection and restore and maintain confidence in the EU food supply.

Basis for the assurance of a high level of protection of human health and consumers' interest in relation to food, taking into account in particular the diversity in the supply of food including traditional products, and ensuring the effective functioning of the internal market. Common principles and responsibilities, means to provide a strong science base, efficient organisational arrangements and procedures to underpin decision-making in matters of food and feed safety.

  Hazard analysis and critical control points ( HACCP) as systematic preventive approach to food safety and allergenic, chemical and biological hazards in production processes that can cause the finished product to be unsafe, and designs measurements to reduce these risks to a safe level, with special attention to traceability.

 Civil and penal responsibilities in food safety.

4. COURSE DESCRIPTION AND TEACHING METHODOLOGY

Introductory classes about all detailed contents of this subject are followed by the exposition by students of a homework about HACCP in food industries or about a particularly interesting law in the field of food safety.

5. ASSESSMENT METHODOLOGY

Final grade report will be assessed considering both attendance and active involvement in theory classes and writting and exposition of the homework by the students.
